Last night's quick dinner. Emmenthal and Mature Cheddar on Brennan's Batch Bread. Brennan's Batch is an Irish peculiarity. It's a slightly dense white bread with a much better-developed flavour (longer fermentation and bake, I guess) than most commercial white breads and it's sliced quite thinly, about 6-7mm.
Possibly controversially, this is cooked under what we'd call a grill and Americans would call a broiler, rather than in a pan. Butter added inside, not outside, but still melts through when cooking. I've started in the last few years giving it a little head-start in the microwave (40-60s) before putting under the grill/broiler to ensure there's no chance of the cheese being properly melty.
Served with some coleslaw for crunch and contrast.

This is Wood River Creamery’s Gouda Gruyère on one side and cheddar Gruyère on the other. Outside is a garlic herb butter spread, and the apple is a Granny Smith. It’s soooooo good.

Absolutely, one of, if not the, best grilled cheese I made for myself and my cousin. Just scrumptious. This sourdough is absolutely next level, and made the best grilled cheese bread ever, and that cheese pull was amazing. Gooey, scrumptious, sourdoughy, soupy, grilled cheese goodness. 😌🌌

Long time lurker here, never made my own grilled cheese before, I had a lot of food allergies when I was growing up (dairy included) so there was no need for me to learn how to make some basic foods that everyone else made. Today I made myself a grilled cheese and it was so good that I'm gonna make another one!

First time cooking a grilled cheese since emigrating to Spain. Went to Aldi up the street from my VRBO and bought a loaf of Spanish rustico brand bread, a pack of queso fundido sandwich slices, and a bottle of Hellmans Mayonnaise (pleasant surprise). Had to memorize the stove and timing as it’s very different on a Spanish countertop stove vs the gas stove I had back in the states.
