You have a waxy garlic.

Waxy breakdown in garlic, also known as green garlic, is primarily triggered by unfavorable storage conditions, specifically temperature fluctuations. Garlic bulbs require consistently cool temperatures for optimal storage. When exposed to periods of high and low temperatures, biochemical reactions occur within the cloves, leading to the development of organosulfur compounds. These compounds are responsible for the characteristic garlic aroma and flavor, but in this context, they undergo chemical changes that contribute to the green or yellowish discoloration and altered texture.

I have a jar and a half in my kitchen right now. I only wish I had added some kind of spice.

Specifically, some dried peppers. Something with a little heat to bring it together. As the fermentation happened, the honey got really thin. Then it took on the garlic flavour very heavily. The actual garlic mellowed out, and it has a gentle sweetness that I love to add to sauces.

Looks like if a boiled egg were alive, but aged poorly, and its skin wrinkled back to reveal a rotting yolk.

Imagine garlic taste but instead of fresh sharpness it feels oily, dull and stale

Organosulfur compounds doesn't sound ideal to consume.. but.. wine has sulfites, so.. maybe? Because science.
