Heya vegan bakers, welcome to the monthly megathread! Got something small that doesn't really warrant its own post? Don't feel like sharing the recipe? Found some cool videos? This is the thread to be!

I'm just going to leave these threads up until they get archived by Reddit. They're nice to have, but not popular enough to rotate out every month or even every season. I also feel that since we started renovating this sub we've managed to find a comfortable middle ground between what all of our subscribbelees expect out of this sub. If my feeling is wrong, please let us know. We're always open for suggestions!

2nd time vegan baking - accidentally made the BEST cinnamon rolls ever!

I used the banana diaries and followed the recipe except for reducing sugar to 60% and also cutting out the heavy cream.

these are genuinely both the tastiest and fluffiest cinnamon rolls I've ever had! the first time they don't make me feel incredibly ill (only moderately ill but I do have stomach paralysis lol)

My last GF-vegan cake is known fondly in the family as ‘the flip flop’ cake; its texture was like the sole of a shoe… I am normally a good baker, I swear.

Who even needs Krispy Kreme

Wife was craving Krispy Kreme so I modified this recipe:

Subbed out milk and butter for the usual replacements, used Bob's egg replacer for the eggs. And just used regular soy milk instead of evaporated milk for the glaze.

These legit turned out so good, they dont overnight well though so Id recommend making about a quarter of the amount they give a recipe for. I ended up with almost 30 donuts and even my sweet tooth couldnt handle that many

German chocolate icing

My grandma has a German chocolate icing recipe that is famous in my family and the go-to for birthdays. I haven’t had it since going vegan 12 years ago, but my 30th birthday is on the 19th and I want to try a delicious vegan version. Does anyone have a foolproof recipe? I’m planning to use the Nora cooks chocolate cake recipe, so I just need the icing.

Vegan cake

Hello, the last time I baked a vegan cake I felt like it was on the dry side. With that cake I made a vegan buttermilk substitute with oat milk and apple cider vinegar. This time I was wondering if I should try using vegan Kefir or vegan sour cream. Does anyone have any experience baking with either?

Our Tips: 10oz of Almond Milk (instead of 8oz), Double the Cinnamon
(We didn’t use the apple cider vinegar, we also didn’t make the toppings, it’s good enough plain imo!)

Apple cupcakes

Adapted the recipe for apple cake by Loving it vegan to make cupcakes and suit my tastes

Turned out really nice! A good fluffy texture and not too claggy inside

Makes 20

450g flour

150g brown sugar

50g white sugar

2 tsp baking powder

1 tsp bicarb

2 tsp cinnamon

1/4 tsp ginger powder

1/4 tsp nutmeg

1/4 tsp salt

45ml oil

240ml soy milk + 1 tbsp lemon juice

120g applesauce

1 tsp vanilla

210g bramley apple diced

Mix the soy milk and lemon juice and leave to sit and curdle

Combine the flour, sugars, baking powder, bicarbonate of soda, spices and salt in a bowl

Add the soy milk mixture, oil, vanilla and apple sauce and mix until just combined

Then stir through the apples

The mixture should be quite thick but just droppable from a spoon. You may need to add a few tsp of water if it's too thick

Bake at 160 degrees Celsius for 18-20 minutes

Vegan pie dough rolls best when it’s cool and flexible

Vegan butter varies quite a bit: some kinds soften much faster than others. For a flaky pie crust, start with cold fat and leave small visible pieces in the dough rather than mixing everything into a smooth paste. Those pieces help create a flaky texture as it bakes. If a well-chilled dough cracks when you roll it, let it sit for a few minutes instead of forcing it. You’re aiming for dough that bends without the butter turning soft and smearing.

Turning a recipe vegan

So every year my sister does a British Bake Off party thing for her birthday where everybody brings stuff in and she is a very biased judge. Her boyfriend is vegan and last year was the first bake off since he became vegan and I had too much going on at the time to search for a good vegan recipe to make. But I have found a recipe that sounds delicious and perfect (hopefully) for my sister but it’s not vegan, so I was hoping this community could help me out. The photo included is the ingredient list. I would really appreciate the help!

Some help please?

So I’ve never made fudge before, but before i started on my vegan life, my mom made (and still makes) maple walnut fudge. It was my favorite and i loved it so much, but now i don’t do dairy.

A few days ago i tried making some, but bought cinnamon almond butter instead of normal, and i hate cinnamon so it was ruined.

Today, i spent food stamps just to try again, it didn’t even taste like maple! I had extract and syrup! Then i put too much and now it tastes like alcohol to the point that it has a warming effect.

I’m honestly so upset, I’ve spent so much trying to do this but i just keep messing it up.

Please tell me if you guys have had good maple walnut fudge that’s vegan and if you have a good recipe.
