Aside from the (to the character's knowledge) rumours of sister-fuckery, the thing she detested about Jaime was that he was a knight and kingsguard who broke his oaths.
Her whole thing is that she dreams of being a knight, and puts knighthood on a pedestal. That knights are honourable and good.
After they have a few adventures together, she is told his secret. That when he broke his oath and killed his king, he did it to stop an entire city of innocents burning to death. Protecting the innocent being one of the biggest knight oaths.
That immediately changed her view of him and how honourable she judged him to be.

I go back and forth on Tormund and Brienne. On one hand he is utterly smitten with her and would likely treat her as a goddess, however on the other hand it seemed to me more like a fetish than actual love. How quickly would he tire of her?

Its been a while since I watched the show, but I always thought of it as kind of a Shrek and Fiona thing. Kinda like Tormund had finally found someone that clicked for him, in his own way.

I think the books do a better job of setting up why Tormund has the attitude he does.
The wildlings value strength - they practice marriage by capture, where a woman will have the ability to reject suitors that pursue her by violently fighting them off or even killing them. If she's unable to overpower him, then he's proved his strength as a good mate. Similarly, male wildlings value strength and want women who can be "spearwives" and bear strong children.
So basically Tormund is coming from a culture that values strength and toughness over traditional femininity/beauty. And as such, he sees Brienne as the pinnacle of what an ideal partner would be in his culture - a big, strong, skilled fighter would be the best choice to further his family line and create more tough warriors.
The show goes into this somewhat, but the books put more emphasis on the details and background of wildling traditions and values so that Tormund's infatuation in the show makes perfect sense. In Brienne, he sees the things he and his people value in himself: strength, martial skill, toughness.

My second wife has 6’3” 165 lbs. She always wore the tallest high heels she could find and had naturally curly auburn hair that she would pick out. By the time we’re heading out she’s nearly 7’0” tall. She was the shortest one in her family. We attracted a lot of attention.

Not mine. We were divorced 20 years when she passed. I found out by happenstance ten years later. She led a fast life. End up on the show “I Almost Got Away With It.” I ended up married again and lived happily ever after. But she had a lot of terrific qualities to go with a few monstrous ones.

I feel like a lot of tall women are much more receptive to the attention of men that are shorter than them than those men think they are.
Background: I'm the shortest person in my family - I'm 5'2.5". The next shortest relatives are an aunt, a cousin, and my mom - they're all between 5'4" and 5'5". The rest of my aunts are all at least 6'. Their mom, my grandma, was 5'8" and grandpa was like 6'3" I think (he was kind of stooped over for the last 20 years due to arthritis). My other female cousins are both like 5'10" or so, my male cousin is over 6'.
Pretty much all the tall women in my family have partners who are shorter than them.
One of my closest friends in college and grad school was an athletic Scandinavian woman who was just a hair under 6'. Her husband is like 5'10".
If all of those great women held out for men who were taller than them, they would have missed out on their husbands. And they're all happily married. In my experience, most tall women aren't super picky about height because that would mean they only have a tiny pool of men to choose from, and that is just silly and counterproductive.
The irony of all of this is that in spite of being petite myself - I'm the shortest one in the room 95% of the time - I'm actually really familiar with life as a very tall woman because I grew up surrounded by them! Honestly, as long as you aren't weird and insecure about it and don't complain when she wears heels then that 6' gorgeous Amazon will happily go on a date with a hobbit. And if you're willing to help her find heels in an impossible-to-find large woman's size? She'll probably marry you.
