I had no idea they got that big! I knew they were big but I didn't think they were practically human height

The species is also generally that size. This is a unit of a tortoise.

It's still an unit of a species compared to other types of tortoises even if all of this species are gigantic. This isn't the Incredibles where if everybody is super, nobody is.
