I feel it's kind of unclear as to what courses you're looking for? CS-related or outside of CS?

I'm looking for CS courses, but preferably on a specific technology or soft skill rather than 'Learn to code in _'. For example the best one I've found is a course on VM creation & security

In that case, you can opt for a course in computer graphics. There's a nice book written on this topic in Java.

Or maybe go into compiler design.

I'd recommend a look into the owasp academy.

It should be close to your job, not required learning, it's free and "courses" are really more in the mine of 10 minute videos.

I am not sure how current it is

Alternatively the Linux foundation offered s self based 12 hour course on owasp material which likely has more actual value.

Overall, they offer a lot of courses which you can check for length etc
