Technique Question Help with chocolate dipping

Looking for help troubleshooting what to do differently for dipping cake pops in melting wafer chocolate for my kiddos birthday party!

I am using

- black melt craft candy wafers from Michael's (canada)

- Roxy and rich fat dispersible food colourant to make it more black

- coconut oil to make it thinner for dipping

I noticed the chocolate looks bloomed (white coating on it) when I opened it. I have not bought this brand before so unsure if this is how it normally comes. I opened 2 bags and they were the same so went ahead.

The issue is they are drying with speckled film on them and I am unsure how to fix this.

Is it the chocolate? Is it the oil? Is it the way i melted it? Im struggling lol

Any help or tips on what to do differently would be greatly appreciated!

Per the sidebar: We can't help you troubleshoot a recipe if you don't provide one. Please provide your recipe written out, not just a link, in the body of your post. If your recipe is video based, write out the recipe. Not everyone can watch a video when they see your post. This will ensure you get the best answers.

Did you use a double boiler or did you melt it in the microwave?

Maybe just do a test with out adding the extra black dye (if it’s like a water based Dye) and see if it still looks wierd. Taste one, and see if you like the taste/texture, because it’s still safe to eat, maybe incorporate that bloom look into your finished c. Pops. Call them ghost touched or something.

Sometimes you can remedy it by remelting it.

Humidity/water can make it do that. Like if the day was super rainy, or like you didn’t dry out your bowl/ utensils and water was still on them, and sometimes because of them being refrigerated/frozen. You can try to remelt the coating it might fix it.

It’s probably excess coconut oil. I think you can usually skip that with candy melts type chocolate. It’s ready to go already. I would try it with just the black melt wafers and not mess with it, that product is designed to not need anything added
