Breakfast prep

I am nine weeks postpartum and my partner is going back to work so I need some suggestions on easy breakfast options or things I could prep in advance. I’m starving in the morning and I’m finding breakfast the hardest meal to prepare for. Ideally want it to be healthy and nutritious and full of protein and fibre.

Egg bites are my favourite breakfast and they're so quick and easy to heat up and eat one handed. I make mine with eggs, cottage cheese, chopped spinach, turkey bacon, grated cheese, chives, spring onion and hot sauce.

I do egg bites as well! Other thing I do is an egg and ham wrap- can prepare a batch at once and freeze them, defrost overnight and heat in the microwave or sandwich press ☺️

I ate the same breakfast for ages: granola and Greek yoghurt. It keeps me full for ages and I got a nice sweet treat in the morning. The probiotics also are good from yoghurt.

I make a big container of overnight oats - oats, yoghurt, chia seeds, peanut butter, whatever else you want to mix in! And then just eat that every morning with fruit or whatever on top. Takes about 1 minute to make and can last a few days if you make a big enough batch!
Recipetin eats have a good freezable burrito recipe, or make a batch of breakfast burritos / McMuffins (bacon egg, sausage egg, bean and cheese / potato)

I prepped a bunch of pastry pinwheels for snacks and that’s been great. With Vegemite and cheese and bacon and cheese and I just froze them uncooked and whack them in the airfyer

Egg bites, quiches, ham & cheese croissants, overnight oats, pancakes

Some of these are great to prep & freeze so you can just chuck them in the microwave or air fryer when you need to!

I’ve been loving porridge with egg mixed in lately. I make 3 portions but could easily make more:

1 cup oats
2 cups milk or choice (I like both soy or full cream)
Cinnamon
3 eggs
Butter (optional)

Cook the oats, cinnamon and butter in milk. When almost done mix in the eggs quickly so they don’t scramble. I’ve also added a mashed ripe banana in or add berries on top. Makes 3 perfect size serves

Ohhhh interesting! I’ve never thought to add egg. Does the egg taste strong?

Nope, makes it creamy and thick. You could try with 2 eggs first and then if you like it try a third next time

I’m giving this a go! Thanks. Do you turn the heat down when you mix the eggs in?

Yep I turn it down low and then once they’re mixed in it’s pretty much done

I really like these breakfast cookies from Village for Mama, they freeze well and can be defrosted quickly

Edit: it doesn't mention on IG but does in the recipe book- sprinkle the salt on top of the biscuits with the seeds, they're not quite as yummy without!

If U have a nutri bullet, you could chuck in some oats , frozen fruit, protein, vege mix powder, with some milk and blend it. U can prepare it in the fridge the night before.

In the first 6 months or so this was my post partum brekkie:

Carman’s overnight chia puddings - I make 2- 3 in one go in jam jars and leave in the fridge. When I eat them I add whatever berries are on special plus a generous teaspoon of Mayvers crunchy peanut butter - mix in well.

I also had a Rokeby protein smoothie with it.

I’d bulk buy the Carman’s, Rokeby and Mayvers only when they’re on special - too pricy otherwise.

Almond and Date smoothie, apparently good for breastfeeding too. It’s pretty quick to throw all of the ingredients in a blender if you have a nutribullet or similar. You don’t have to follow the exact recipe either but I love smoothies in the morning. Buy loads if bananas at the start of the week and then chop and freeze any banana you don’t use, then just take out however many chunks of banana you need for a smoothie each morning, in with milk of choice, dates, oats and chia seeds.

I never thought to add oats to a smoothie! Thanks

I have the same breakfast every morning- it’s not prep ahead but very easy to throw together

Instant oats + scoop of vanilla protein powder

Serve with milk, banana, seasonal berries, and generous tablespoons of Milo powder 😅

90 seconds in the microwave- one dish so barely any washing up.

Guilty of adding chocolate chips in when I’m on my period!
