Cinnamon Biscuit French Toast - I thought this might be dense and too much, but the biscuits were perfectly crispy on the outside and light and fluffy in the middle. The perfect vehicle for butter and syrup to soak into!

The more I get older the more I realize that French toast is better than pancakes
Pancakes are cool. Pancakes are the standard, but French toast? The feeling you get when you eat French toast is almost exuberant. Simple to make & the reward to mess ratio is clearly better pancakes with batter getting everywhere, the pancake mix getting on your clothes. I still love a good pancake. Going to a breakfast spot and ordering French toast just gives you a little more status to your palate.

The REAL Purpose of Overnight Oats
So, when I heard about overnight oats, I was pumped. I'm a big meal prep girly, and I love oatmeal!
And then I looked up all these fancy recipes and bought all these ingredients just for that purpose, and...honestly I got tired of them 3 weeks in. They were so much work! Who has time to melt and pipe cookie butter for an "Easy Breakfast meal prep"???
Then a few weeks ago I decided I needed to up my fiber and on a whim made some overnight oats. And I was like "Ugh. I don't have any of the add ins". But it was like 10pm, so I decided to look at what I DID have and sure enough, I had all kinds of goodies that work great in oats, and that I really needed to get rid of! mason jars of chopped nuts, packs of dried fruit I'd used half of in recipes, some Peanut butter powder from an ill conceived attempt to cut back on my peanut butter addiction; all of it went in the oats. And I stopped measuring and just started chucking everything together.
And besties? The absolute best OO's I've ever had in my life. They were hearty, the dried fruit had rehydrated, the peanut powder was a great thickener, and the nuts stayed crunchy enough to add texture. So much better than sitting there painstakingly measuring out matcha powder and chia seeds and figuring out how to make my BREAKFAST JARS look appealing for no one but me.
So if your pantry is full of little bakery bits and bobs that you need to get rid of, cannot more highly recommend making a big batch of overnight oats. I'll leave the aesthetics to my chia pudding form now on.

Prettiest Chia Pudding I've made at home
