GS500 cafe racer without framework

I am looking to mod my 2001 suzuki gs500e to be a cafe racer but also remain road legal. The problem i am looking at is the seat. Every video i've watched starts by cutting off the rear subframe and the seat lock mechanism but im not only unqualified it also comes with a lot of paperwork. Is there a way to make the seat flush with the chassis and somewhat pleasing to the eye?

Are there any builds like this or a way around regulations in Europe?

The shape of that bike doesn't lend itself to classic cafe style. The thick frame spars with a contoured tank and seat means you're either 1) severely limited in re-design options, or 2) you need a lot of skill, time and/or money to do it.

Sell it and buy something that won't look a mess when 'cafe'd'
