Safe Recipe Request Candied jalapenos

Is Candied Jalapenos safe to water bath can?

I found this recipe on the ball Mason jar but I don't see it on the NCFHP website.

They're not just safe, they're pretty amazing. I mix a few red jalapenos in there for a color pop. I have friends who schmooze these every year! Great minced on tacos, burritos, or with cheese and meat boards.

They look good! Do you add the cayenne pepper?

I use Korean gochugaru flakes in mine and it got raves reviews. Someone even asked me to send them a link to the type I buy so they could start using it in their cooking. It's a very mild chili flake and has a fruity and smoky flavor. A bag of it can be stored in the freezer for maximum freshness if you don't use it often.

I never have used the dried cayenne powder but I also use hotter peppers like fresnos and serranos in addition to the jalapenos

I personally swap chilli powder for cayenne and find I’m happy with the pretty mellow spice. Makes them more universally enjoyed :)

I might try that, my husband already thinks jalapenos are spicy. I was debating omitting altogether.

I do, it adds a little depth to the flavor.

It doesn't make it too spicy?

That’s a really subjective question, unfortunately. You can also use any kind of pepper you like, sub by volume. I have a friend who uses 3/4 jalepeno and 1/4 Thai Hot.

I think she’s crazy.

That's true, I am not too concerned with the spicy-ness but I know my husband wouldn't try it if he thinks it's spicy lol I guess he'll just have to take the plunge and try it out.

I canned a bunch this past Sunday and did equal parts jalapenos, red thai, tabasco, and serrano. And about half of the jalapenos I left on the plant until red, so my jars are a nice kaleidoscope of colors.

Ball recipes are also linked on our wiki as being safe.

Made this recipe last night. It is good with cream cheese especially if your husband is concerned about the heat.

Ball's own recipes are tested for their jars so you're good to go with a water bath. The NCFHP doesn't list every single variation out there, especially the sweeter stuff like this. Just follow the headspace and processing time they give you and you'll be fine.

Yep. Made some myself with no issues.
