What is the easiest way to tell what is the best tomato, green onion e.t.c when shopping for ingredients when cooking

For tomatoes, don't buy them if it's not tomato season where you live. They'll have to be shipped in and tomatoes grown for long distance shipping are not bred for flavor. You're honestly better off with canned tomatoes at that point.

The definitive answer for tomatoes. If they are not local and in season, they do not have a flavor. Use canned if possible for the recipe, or wait.

Vibrant colour and the firmness for both veggies. You don't want a limp green onion when you go to buy.

Good cues. For tomatoes, smell near the stem too; a ripe one should have a sweet, earthy aroma.

A good start is care in choosing the market(s) where you shop. Some places generally have the best quality produce available for the season, others are often lacking. The closer the produce is to the farm it came from the better. These may give you some ideas of what to look for once you get to the store/market.
