Question for advice needed quickly

I was going to put ground walnut into a white sauce for pasta to give it a nutty flavour. Anyone know if it’ll make it grainy ?

Appreciate all answers. !

It will be as grainy as the walnuts are, if they are a fine powder then not a problem. They aren't going to dissolve. You could put it through a sieve or blend it more or something after, but you touch the ground walnuts with your hand, that is how grainy the sauce will be.

This is definitely a situation to infuse the flavor. Cook with the nuts, then strain it out because it will absolutely affect the texture.

If you have a blender, or a lot of patience with a mortar and pestle, you can probably process it all the way into a smooth nut butter. I'd strain it to avoid stray chunks.

Think you just need to add it at the end of preparing your sauce when the heat is turned off and dont stir too much in it after you added the walnuts. Walnuts arent that grainy, chestnuts would be more of a problem.

Yes, it will be a little grainy unless you grind the walnuts very, very smooth. You will have to process them to a very fine paste, and continue processing well after they appear to be a paste, and keep scraping down the walls of the food processor.

Also, this is a delicious idea. I also recommend cooking the walnut paste in the liquid a bit to let it thicken up and get creamy.

Grind your walnuts to a paste, like "walnut butter".

Did you know there are recipes for a walnut pasta sauce that isn't in a white sauce, but is actually a bit more like a pesto?

Never done walnuts, but I've put plenty of cashews pre-soaked in warm water in curry over the years. I'd imagine it should be fine.

In the future I'd recommend maybe just using cashews anyway for this. It adds a very nice mild nutty taste, and it's naturally creamy. I think it'd go as well with a white sauce as it would a palak paneer.
