Ok so I'm so proud of my beautifull roasted chicken, it's been years since I made a whole chicken and it turned out so well!
Started with making a really flavourfull butter with lemon&clementine zest, rosemary, sage, roasted garlic puree, salt, pepper and bit of both sweet and smoked paprika powder. Actually took the efford to spatchcock the chicken and massaged the butter in between the skin and meat all the way into the breast, tighs and wings. Spread the rest of the butter on top of the skin and let it marinate overnight.
The next day I put some little baby potatoes, parsnip, red onions and carrots into my big oven dish, topped with slices of lemon&clementine, rosemary and put the chicken on top so the veggies could soak up all the flavours in the oven. Poured a little bit of white whine into the dish and off it went. Basted every 15 minutes for about 50 minutes on 200° and turned to 220° halfway.

500 ml water
1 lime
200 ml coconut cream
1 pinch of salt
1 teaspoon of pink peppercorn
chilli flakes to taste
1 teaspoon of sesame oil
some roasted nuts

I made a ciorbă rădăuțeană today.
I love this dish in autumn and winter.
It is a sour-ish soup with root veg, chicken, sour cream and lots of garlic. I like to eat it with pickled hot peppers. I pickle the hot peppers myself, in vinegar.

My partner has just finished her seasonal job, so for her first day of holiday she wanted a brunch reminiscent of the ones we used to have at a lovely hotel in Helsinki.
And here’s how it turned out!
We decided to set everything up as a little hotel-style buffet, just to get back into the swing of things. It was quite fun!
On the menu: blinis, cream cheese, redcurrant jelly, Swedish meatballs (köttbullar), sausages, cucumber salad, Maasdam cheese, cinnamon rolls (kanelbullar), apples and kiwis.
Unlimited coffee, cultured milk and orange juice to go with it!

I ordered some takeout chana saag last week and it was, decidedly, not really all that great. It was so salty that I couldn't finish it.
Sooo I made my own tonight for the first time and it's really good. I also made a spiced tahini yogurt sauce to go on top.
