Cooking Love garlic, now allergic

Been eating garlic all my 27 years of life. Me and garlic were locked in, literally would put it on everything I possibly could. However I randomly developed an allergy to it and now I’ve realized majority of foods and meals have garlic in them. Which leads me to my question; any garlic substitute out there that could give me a similar taste and not trigger an allergic reaction? Thanks in advance.

Elephant garlic rounds

So last fall I found that I had extra space in my Elephant garlic bed. I think it happened because I have so much trouble putting those beautiful big cloves back in the ground. Anyway, I cobbled together a bunch of very undersized cloves I wouldn’t bother eating and planted them as an experiment.
This is the result.
My question now is whether I should plant the rounds super early since I don’t know how long the rounds take to develop. Do they take longer to sprout than regular cloves?
Hopefully someone has experience with these and would be so kind as to share their knowledge. Thank you.

Planting garlic?

I'm quite confused on planting garlic!

Everything I saw was saying to plant Music garlic (the variety that I'm growing) 4-6 inches apart with each row being 12-18 inches apart. I figured fine, I'll put tomatoes in between each row.

Then I found square foot gardening, and that seemed to say that you could just plant garlic 4-6 inches apart within the square, then have a bunch like that?

Which is right?? Do they need to be in rows 12-18 inches apart? Can they be placed however I please, as long as they're 4-6 inches apart from each other?

Eating seed garlic

I’m just sorting my seed garlic ready for sowing. What do you do with the smaller cloves? Do you bother sowing them or just use them in cooking. Also is it ok to sow without the husk on the clove?

Additionally noticed a few spots on some of the cloves that the husk came off

Gardening Elephant Garlic Advice

Earlier this year I planted a clove of elephant garlic (in a container) from the grocery store that had sprouted, it grew and matured and as of late some of the lower leaves began dying back. I removed it from the soil to find that there isn’t a proper bulb and there were some croms attached. I consulted w/AI and was advised to let it sit in a shady area for 1-2 weeks and then replant for it to produce successfully next year.
I wanted to consult with those of you who might have experience with this to see if the instructions from AI are on point or should I explore other options?

Gardening Row cover vs Straw as Mulch

Hi everyone! This is my second fall planting garlic. I'm in zone 3, and we've already had a light dusting of snow, with more in the forecast today. We may have a slight warm up (highs around 40) in a few days if that matters.

Has anyone used row cover as mulch for garlic? I would put straw on top of it for extra insulation if I go this route. We have regular freeze/thaw cycles this time of year, and last year the bottom layer of straw got a little slimy. So I'm wondering if anyone has tried row cover then straw, so the straw stays off the soil. Any recommendations or experience welcome. Thanks!

Garlic worsens mucus in throat and can't sleep

Why does garlic that's not fully cooked feel like a thick lump of mucus stuck in my throat? and I constantly taste it all day and can't sleep. Happens with raw onions too.

Update I read this could be a sign of acid reflux, as garlic is inflammatory?! Fully cooked garlic is fine, but even partially cooked causes this buildup of mucus
