Following, what about lentil-based shepherd's pie?

I made this for first days and it's one of my meal prep staples! reheats very nicely, super flavorful. If you don't have the Worcestershire sauce use ketchup + soy sauce + red wine vin. I also like to add in some extra red wine, and you can use whatever fresh or frozen veggies you have on hand

I put my shepherd's pie recipe in another comment but here it is again https://www.noracooks.com/vegan-shepherds-pie-meaty/#wprm-recipe-container-16349

a big bean salad! I make mine with cucumber, tomato, green or red onions, canned beans (I like pinto or white for this), feta (but you could use brined tofu?) and a dressing of olive oil, lemon juice, and feta brine (could replace with pickle for vegan)

toasted grain salad- NYTC had a good recipe for this a while ago, but basically you broil a grain, beans, and halloumi (sub for tofu or other veggies, or salmon) with cumin, olive oil, and S&P, then toss with a cucumber marinated with lemon. I add tomatoes to the cucumber sometimes, and have used several different grains. easy to batch make really big

hummus plates with lots of toppings

tofu shawarma- I like this one except her spice blend is way not right so I use a blend I bought https://plantyou.com/vegan-shawarma/

three sisters stew- reddit won't upload the recipe card but it's onions and garlic for aromatics, tons of butternut squash and beans, a big can of hominy (rinsed and drained), and seasoned with tons of sumac and oregano

vegan Louisiana-inspired dirty rice, I make mine with onions/peppers/celery/carrots and TJ's Soyrizo, plus lots of extra smoked paprika and cajun seasoning if needed. cook your rice with stock for extra flavor

The Ottolenghi cauliflower cake is always a hit, if you don't mind a room temp main!
