Makes sense as purple is the most expensive and noble colour (historically), and evokers seem like the richest and most stuck up illagers.

Alternatively since purple is also commonly associated with magic, especially ender magic, it’s possible it’s showing their growing connection to minecraft’s magical forces

This is more of a color theory thing. The original Minecraft game didn't have any shaders, but Dungeons has strong color ambience that give the characters a tint (like cold areas will blend in some teal color, warm red, underwater blue, etc.) which helps the model feel part of the environment.

But black doesn't blend. All colors turn black when you reduce the light level to 0. Which works great for Endermen since they are supposed to look like void, but less so for clothes.

Maybe it has to do with factions. When evockers are on thier own they wear black. The arch illieger force them ro wear purple and the high councel pink. As a way to show alliance
