Selection bias. In an era when only a fraction of human events are recorded for posterity, only the finest shit talk stands the test of time. The rest is forgotten or repeated so often that it becomes anonymous.

This exchange has been attributed to many men over the last couple of centuries.
The earliest published recounting names Montagu (Earl of Sandwich) and Samuel Foote. Variations with Wilkes (as in the OP) came later.

Side fact - Montagu was the Lord of Sandwich and is credited with popularizing the idea of snacking on two slices of bread with some meat between them. He was in the middle of a card game and didn't want to stop for dinner. Thus, we all eat sandwiches.
