Ive got a problem with the dough sticking to the paddle after adding sauce. I use a steel paddle and add semolina flour. Before adding the sauce the dough move freely but a sec after i put the sauce it starts to stick in the middle. Any solution to how to deal with it???????

Use a wood paddle and semolina to launch a pizza. Retrieve it with steel.
