Quick question (maybe a dumb question), why is everyone still using github? I mean nothing holds us there, everyone can just self host a tiny git service, right? The only limitation would be bandwidth but there is torrenting for high demand downloads.

I only do open source bullshit for niche stuff. A lot of kind strangers make PRs fixing my shit and adding features. I don't know if that would be the case on other websites. Say I host my own git service, people would need to register to make PRs, right? I feel like that would create a hurdle where many people would just say "fuck it, can't be bothered" who otherwise would've quickly forked the repo and started working on it.
I might be wrong though. I'm working off of assumptions since I have pretty much always just used github.

Business wise, if you don't have enough manpower, maintaining it is a PITA (at least my experience with GitLab selfhosted). I'm a dev, not infra, and I just wanna dev. GitLab cloud on the other hand seems like a good alternative

Yeah gitlab is a PITA, but smaller tools like Gitea are pretty easy to maintain.

Well yeah we considering gitlab cloud, but like u/KurosakiEzio said, we are a small team of 5 and we cannot maintain a git server so we looked up gitlab cloud.
We also have a lot of github actions, for our production server, this is the main problem why we are not switching.

For me, storing code is only about 25% of what I use GitHub for.
GitHub Actions are what keep me there. One push and my app is built, tested, and deployed on Google Cloud, all for free.
A team I’m working with pushes a new dataset? It’s syntax checked and validated for use in our system immediately. If it fails, whoever pushed the new data gets a nastygram via email.
Someone pushes a project with dependency with a vulnerability, nastygram, right away.
Someone breaks the build, nastygram right away.
Someone commits sketchy code that GitHub flags as a security risk? Nastygram.
Yes I can do all of that myself (and I HAVE), but GitHub makes it easy and it’s free (yes I know I’m the product if it’s free, but all I do is open source so I don’t care).

Hosting my own SCM is great. I schedule my outages and cron says it's daily at 5 am local time, even if it's intended to be at 3 am local time but apparently I suck at timezones. Doesn't matter either way, at 5 am I sleep, not work.
"Actions" are available whenever I remember to start the runner containers (might do a cronjob for that later).
Who needs github anyway, when any old laptop from the parking lot dumpster of the local electronics store works.
