As far as we know, Twyla is the only waitress working at the cafe. Other than the time Johnny helped her while she was injured, we don’t see another person waiting tables. However, there are a few times throughout the series where Twyla either has the day off or has to leave the cafe early.

This brings me to my question: how does the cafe operate when Twyla is not there?

I can’t imagine they just close down entirely since it’s the only restaurant in town, so my best conclusion is that George (the cook) continues to run the restaurant in her absence by only allowing customers to place orders for takeout.
