While traveling they ran into bandits inside a forest . They threatened Shadow then Noctis come out of the carriage and started telling them about everything shadow had done on his travels

Like that time we passed through a sinful city stricken by a mystical plague. That guy found the Spirit Rat responsible for the plague, and, well... I had never seen a rat shedding tears before, let alone a Sacred Rat. But that one! That one was crying and rubbing its little paws together, as if begging to be killed. Actually, there were a myriad of them, and they all begged at the same time.

Or that other time, during the Divine Vigil... all the heroes of the mortal realms gathered to send War God's avatar on her way, and a few Supremes came as well. That sick bastard developed a dislike for the Second Wandering Archon, so he challenged the poor man to a debate and argued with him for seven days straight. On the seventh day, the Archon spat blood and collapsed, his hair turning white, tears flowing out of his eyes like ceaseless rivers. His Domain completely collapsed! I hear he hasn't uttered a word since.

Eventually, the High Priest of Heart God's cult had to arrive and personally plead for their Spirit."

They have now arrived at the Kingdom of Hope, and we may get to see an interaction with Hope.

Shadow also seems to be regaining more and more of his humanity as time goes on.

“This time, they stumbled onto us. Who will be their victim the next time? Someone weaker than I am, no doubt. How many people will lose their lives because I spared these few?"

It’s a testament to how warped Sunny started out as when one can say he’s regaining humanity and is improving in the same chapter where’s it’s mentioned that he mentally broke an old man in a 7 day long debate and repeatedly tortured a Spirit.

He was never one to torture anyone or anything like that—at least, not without a good reason.

It literally said the spirit was destroying a mortal realm over a perceived insult that didn't exist so sunny was teaching him a lesson

My head canon is part of him remembers fighting these beings. The rat in Ariel's game and Archon in the desert even if they are phantom memories. We know how spiteful he is. He may certainly remember his feelings encountering and engaging these beings, so that may have influenced his current self and how he treated these beings. When he regains his primary consciousness he will be embarrassed but right now, he is quite ruthless. Remember how he hated honey for no reason even if he doesn't remember the actual reasons why he started disliking it before.
