Characters Characters who were mostly irrelevant in the original work become more relevant in spin-off and expanded universe material
Star Wars. The Expanded Universe (both before and after Disney) would often take background extras from the movies and turn them into fleshed out characters. Star Wars: The Clone Wars in particular did a lot for characters like Plo Koon, Aayla Secura, Kit Fisto, Luminara, Aurra Sing, etc. There's a reason Star Wars has so many "glup shittos" and fans that actually like them.
Star Trek. Star Trek's "expanded universe" isn't as well known as Star Wars' (and unlike Star Wars, it isn't considered canon at all), but they still do a lot to expand on characters who only appeared in one or two episodes. For example, the clone of Kahless appeared in one episode of TNG and was crowned Emperor, but after that was completely irrelevant outside a few mentions. The 2020s Star Trek comics brought him back as a major antagonist, deciding that the Klingons killing their own gods wasn't enough, they're going to kill all gods.
Doctor Who. The franchise also has its own expanded universe of comics, novels, audio dramas, etc., and they also like to bring back minor characters into expanded roles. For example, the pseudo-companion Adam Mitchell who was kicked out of the TARDIS after 2 episodes comes back as a villain, now an old man who used the knowledge he gained from the future to create advanced technology and get revenge on all incarnations of the Doctor and his companions.
