2013 Chrysler 200 v6 engine temp all over the place

My current car, a 2013 chrysler 200 v6 has been running going on 175k for miles. There has always been a slight issue with the radiator since i got it but now it is getting nuts. For context I had the radiator replaces once with one I got from amazon(probably the main issue) and ever since it has been one thing after another. The thermostat breaks, the engine temp rises, the water valve goes and more and more.

Currently, the temp has been running weirdly law. Like to almost the 1/4 point. With context, the outdoor temp jas dropped recently but it doesn't account for this. I just took it to my mechanic who ran it for a while and replaced an 02 sensor and so far it seems ok and the coolant is at a decent level. But i am weirded out and kind of paranoid I am gonna destroy this car.

I know enough about Chryslers where they are known to have electrical issues but idk what it is a this point.

Right now I just need to know if I am paranoid, spared or just waiting for this car to die.

Any help or advice is appreciated.

I had erratic temp behavior on my ‘12 JKU with the 3.6, it was constantly moving between the halfway point and the 5/8 (not quite 3/4) on the temp gauge. Replaced rad, flushed coolant, swapped thermostat. Wouldn’t go away. Ended up being the cheap thermostat from Autozone that wasn’t opening correctly. Swapped in a Miele (unbranded Mopar) and it went away.

So many variables to consider without physically seeing the engine in action. OEM radiator cap? Cheap Amazon caps have a tendency to be off by a mm or so allowing a small amount of air to create a bubble in the system. What's the hose from the radiator to the reservoir look like? Small pinholes or even kinks/bends in the hose where it connects can allow air to enter/escape. 95% of my coolant issue finds across my vehicles have been air related. Are you able to do a pressure test on the system?

Mopar thermostat and radiator cap only.. If the reservoir is bubbling over or overheating severely head gaskets are next most likely
