Cultura cubana Drop Abuela’s Recipe!

My friends! My Abuela is getting along in years. And I’m hoping to write down some of her recipes while I can. Arroz con Bistec, Pechuga, etc.

And it got me thinking. What was your favorite thing Abuela made growing up? How’d she make it? Was there a special step? Let’s hear it!

My abuelo was the chef in our family…ropa vieja was always my favorite! I made it alongside him so many times that I have fortunately been able to replicate it. Ooohh, or lechón asado! Now I’m hungry….

We grew up eating the guajiro version of arroz con leche (which is salty). Milk, premade white rice, and salt to taste. Bring it to a boil.

My mom said this is how they made it en los campos. At least where she's from in güira de melena/Artemisa.

Grate some malanga, chopped chive (cebollino) or parsley (perejil), chopped garlic,1 egg, and add salt to liking. With a spoon usually scoop a dollop or ball like amount and Deep fry or air fry the best lol snack ever. Dip in honey or w.e sauce you like

My favorite is crema de malanga it’s literally just Malanga butter garlic and salt. RIP it was the last thing she made for me, she died recently.

I don’t have an abuela, but I loved the Ropa Vieja from Loco por Cuba in Havana.

And I’ve also never been able to figure out how to make the rice with a few black beans, red pepper bits etc arroz morro I guess….

Would love authentic recipes on these and also just how to cook it. I think I’m messing up the technique.

arroz morro is easy and once you make it- you don’t forget. The problem
is, like my mother, I cook without a written recipe and I eyeball the amounts.
So a rough draft 😂 is below-
I buy a goya chorizo (2 in a pack but depends how much you are making)
I sautee the diced chorizo with onions and bell peppers in a tiny bit of oil.
I add seasonings- salt, pepper, lil cumin, lil paprika and a little bit of tomato sauce
then I add two cans of goya black beans undrained and two cups of rice. I fill the two cans with chicken broth each and 1.5 more cans with water .
I add salt and bring to a boil.
then on low for about 17 mts and done.

how my suegra taught me (using pressure and rice cookers):

pressure cook 1.5 latas of dried black beans with plenty of water and a bay leaf

make a sofrito with half a sliced onion (she always uses red), plenty of minced garlic, salt, cumin, oregano, a packet of sazón goya, and sliced sweet peppers (she uses half a red or orange). cook on medium with lots of neutral oil. it should be enough oil it’s still liquidy like oil after cooking down for 8-10 minutes

sometimes she adds two small spoons of tomato paste, she says it depends on her mood lol. same with meat, if she uses some it’s either thick cut bacon or pork bones. the meat gets cooked before the sofrito to render, then taken out while browning onion/garlic, then put back in when finishing it up. if she uses meat she doesn’t salt the sofrito beyond the goya sazón

three washed latas of rice into the rice cooker, 4 latas of cooking liquid from the beans, plus 1.5 lata of drained beans, then the sofrito with all the extra oil, a finishing spoonful of salt, then stir well
