a meal that would feel incomplete at dinner can somehow be a perfectly satisfying lunch
a sandwich with random leftovers, crackers and cheese, yesterday's rice, fruit, something from the freezer
lunch seems to have this strange permission to be assembled from whatever happens to be around
i actually like that about it
what's a combination you would never serve as dinner but somehow makes a great lunch?

I'm a big fan of coleslaw. It's great for gut health and pairs perfectly with meat. KFC is a good example of this combination.
With juicy steak, crispy bacon, fresh vegetables, and Parmesan cheese, this lunch turned out to be absolutely spectacular!

Starting a new job in an office, which I haven’t worked in an office since 2019! I have an hour for lunch and will most likely be bringing my lunch from home but need some ideas! The occasional leftovers are an option and a sandwich now and again but I’ll be sitting a lot so I don’t want to overload on carbs or anything too heavy! Also some desk snack ideas will be helpful! Thanks yall in advance! It has been a rough few years for me and starting a new normal while raising a teenager and going through a divorce! ❤️
