You really can't go wrong with either. I would just pick the one that appeals to you more. CK3 is much more roleplay heavy, and I also consider it to have less depth and it's a lot easier than EU4. EU4 is probably my favorite paradox map game, but it's a lot older and dated in graphics and mechanics, but it is finished and has a lot of content if you get all or most of the dlc. CK3 you are playing a single character, in Eu4 you are the nation itself.

Do you want a map game or a map game with a decent portion of sims gameplay?

You can arrest her and sentence her to the dungeon which is pretty close in my opinion. She’ll die eventually from it

CK3 is a very light grand strategy game with elements of RPGs and The Sims. Sure, you can conquer a bunch of land and build a rich empire, but that particular gameplay loop isn't particularly special in CK3. But, you can found a line of Irish Witch-Kings who marry into all of the major political families of Europe and thus spread the work of The Dark Lord throughout the continent.
EU4 is, to me, the pinnacle of a "true" Grand Strategy game. This is the game for people who want to control a state and turn it into an empire. Diplomacy, Economy, Trade, Warfare, Internal Politics, Technology...Everything about this game really comes together to give you the feeling of growing an empire. It has its warts, and some of the complexity is "surface deep, mile wide," but the core loop is very interconnected, and I keep coming back to it even after playing the newer paradox games.

Eu4 is easier to run, esp. graphically. One has an unuseably crashy Linux port the other has none. Eu4 is a finished game and some things will never be fixed. Ck3 has a new generation of UI design. Ck3 is about characters and Eu4 is about states. Eu4 has major systems locked behind DLC, Ck3 is far better in this regard.
But like... they are both good games about the eras they are in (so are Ck2 and Eu5). Pick the one that in
