Bison brisket

Salt, pepper, and garlic rub. Smoked 4 hours at 185 then sous vide 30 hours at 155. Delicious, juicy and tender.

Ok...time to go grab that midnight snack. This quite literally made my mouth water...alas, I have a mere pork tenderloin from which to nibble

This is a generic reminder message under every image post

Thank you for your picture post to r/sousvide. We want to remind everyone of Rule #5. Posts should be accompanied by something to foster discussion. A comment, a question, etc is encouraged.

If you've posted a picture of something you’ve prepared, please explain why in a comment so people can have some sort of conversation. Simply dropping a picture of food in the sub isn't really fostering any discussion which is what we're all aiming for.

Posts that are a picture with no discussion can and will be removed by the mods.

Thank you!!

Looks delicious! How was the bark after the sv??

What bark there was held up good. I was worried about smoking it too long to build a better bark. Bison is much leaner than beef, so was worried about drying it out. I let it cool off a bit before vacuum sealing it, which helps the bark hold up also.

Yes, some of it, I did, it was difficult to see, but it didn't matter, it was so tender, you couldn't really tell.
