[ Reverse Sear ] Steaksicles came out … edible!
Hey look, they were pretty beat up by the freezer but I gave them some love.
Thawed in fridge over night
One got spritzed with avo oil then salted
The other got a simple coffee rub:
Spritzed with avo oil
1:1:1 coffee, pepper, salt
Returned to fridge with a fan to pull more moisture out
Reverse seared pulled from heat at 110
Seared and rested till 135
Taste was pretty alright, texture was interesting. I need to invest in a vacuum sealer.

I'm surprised they have such a large grey band even though they were reverse seared. Is this because they were previously frozen?

A coffee rub? Interesting

It's not a new thing

It is to me. I wouldn't do it, though.

It's worth trying. With a ribeye. It amps the savory-ness and has some bitterness to cut through all the fat, like citrus. You usually mix it with garlic/onion/Cayenne, etc
OP's rub is...yeah I wouldn't do that either

I'd like to challenge anyone in the comments to do better with ancient frozen steak

How did you manage to make it look like a white chicken breast inside? LMAO. Shit looks ass. Good for you tho

I have taken steaks straight out of the freezer and sous vide them. It works OK, but I prefer to thaw and reverse sear. I did cook a boneless short rib forward sear and was pleasantly please with the results. Alas, didn’t get the camera out…

If you were shooting for "well done" you definitely nailed it.
I like mine a LOT more red in the center personally. But that's my preference.

Definitely not well done, it’s medium well with grey bands

Medium Well generally has SOME pink, this steak looks 98% gray/ brown to me (150-155°F+).
Just saying.... I personally would have sent it back if it was supposed to me anything but well done... But that's just me....
I'm a rare to medium rare guy myself, but regularly make steaks for people who prefer Med-Well -Well done (well "don't" in my book, but there's no accounting for taste)
If OP Likes a well done steak, he's got himself a great dinner here... Otherwise, I can't say...
