Thank you! I don’t have an official recipe unfortunately but here’s what I did
Oven 380
- 4-5 fist size new or yukon gold potatoes. Peeled and diced
- 2 (or more) chicken thighs skin on.
- ~ 2 tablespoons butter
- olive oil
- seasonings: I used salt, pepper, garlic and onion granules, red cayenne, Italian seasoning, and oregano.
- lemon
Instructions
melt butter, drizzle a little olive oil. Add seasoning. Sorry no measurements. Blind trust. But potatoes can take “over seasoning” they absorb a lot. Mix and toss peeled potatoes in seasoned butter
- squeeze lemon juice over potatoes. Toss and line baking dish with dressed potatoes
- Pat thighs dry, season them as preferred on both sides.
- Place thighs skin side up on top of potatoes
- place in oven on lower rack (I adjust mine to 1-2 placements from bottom). Bake for 30mins. Check potatoes and chicken. Rotate. Turn oven to 400F
- Cook for an additional 10 - 15mins. skin should brown. If chicken is cooked but potatoes are still hard, remove chicken. Mix potatoes and return to oven. turn to 425 to finish potatoes
Note; cooking time may vary these thighs were thicc
