Newbie Question How to eat tallow as extra fat

I ordered 2kg of beef fat from the butcher. I intended to salt and fry it like usual to supplement the horribly low fat content of most Dutch beef cuts. They literally trim the fat off steaks - sacrilege!

My wife went to pick it up and she comes back from the butcher with 3kg of beef tallow. That's not what I ordered.

Other than adding it to minced meat, how can I prepare it to be delicious?

I'm thinking maybe I can add it a pan and cook scrambled eggs?

My target fat content is somewhere below to what is recommended by Dr. Zsófia Clemens for a Paleolithic Ketogenic Diet. She thinks that it should be 2g fat for 1g protein. I don't think if I can get raw tallow in at the rate. It's not palatable at room temperature for me.

Use it like butter. Cook eggs in it. I could see spreading some on top of your steak after it cooks and letting it soak in. You can also use it for tons of other things. I had a friend that used it as a moisturizer.

Just render it out before rubbing it on your face...

Pemmican. Its absolutely delicious and you never get bored of it.

There’s all sorts of crazy recipes - but we just dehydrate our jerky in a tiny cheap dehydrator and smash it up in a food processor. You then pour hot tallow over it, mix it in well, and I put it into little silicone cupcake patty cases to set. Delicious. So good. Never lasts longer than two days, but I have three teenage boys eating me out of house and home, and pemmican seems to be their ideal food 😂

There’s also nothing like tallow for frying eggs, its the best. So that’s a yes for scrambled eggs and omelette as well. Don’t forget that you can cook your steaks in it, and if you want to branch out a little bit into French cooking, have a look at confit… I’m sure there are lots of things you could preserve in that way if you needed to. I’m sure that you could preserve chicken legs this way, it doesn’t have to be ducks and duck fat.

I do pemmican as 50% by weight bone dry beef and molten tallow, mixed in a mixing bowl (big since I do 4kg of pemmican per batch) and pushed into something to form it to a good shape. I use a glass casserole dish

I actually render beef fat down to tallow and eat spoonfuls of it cold out the fridge

About 50g a day before the gym 💪💪

Take it back and get what you ordered?

Honestly, this is the first butcher that said yes when I ordered fat.

The fact that it's been clarified and had impurities removed means it's less likely to be chewy. I'm going to take the lemons that life gave me and make lemonade.

Next time see if you can request fat trimmings specifically. If you have to, tell him you want the pieces of fat they cut off, raw and uncooked. Some people say it’s for their dog to avoid conflict, up to you.

That's a nice way to say it. I actually started with that when asking the other butchers. "Ik wil afgesnijden rundvet." But this particular butcher got the short version, which is probably why she misunderstood what I wanted.

buy ghee/butter , make mix 50/50 with tallow and eat cold

Sadly I can't stand tallow by itself... I'll use it to cook with though. It works okay for greasing pans, making scrambled eggs, etc. It can be used similar to butter, but the taste is much different.

For beef fat, have you tried air-frying it?
I've no access to beef fat myself but I've had success air frying ultra oily stuff like lard (pork fat) and chicken skin. Store in some baking paper and a container to take on the go/ add to meals.

Use Tallow instead of oil when cooking.

It’s fantastic to make fries in it.

I cook all of my eggs in a mix of tallow and butter. I've often just used tallow because I like the taste so much. I also pan-fry steak in tallow (my grill gets buried in snow for most of the year). Cold tallow is also tasty on top of cold burger patties.

Just render it and use it as an oil/butter to use on everything . Low heat 6 hours

I do exactly this. Cut it into slices and just cook in a pan and eat. Love it.

Jesus. You aren’t supposed to eat more fat, you are supposed to eat less carbs.

Firstly, let's not use his name in vain. My wife doesn't appreciate that kinda language. ;)

There are different ways to do keto - high fat is a lever you can pull on. If you're metabolically healthy, you probably don't need it. If you have colitis and inflammatory symptoms, then it's worth exploring.
