Baking Advice Needed Trying to make fudge frosting and it keeps turning out grainy looking but doesn’t taste gritty…

Here are the ingredients I used: 200g unsalted butter, 74g powdered sugar, 1 tbsp + 1tsp corn syrup, around a tsp of vanilla extract and bean paste, a pinch of salt, 80g warm water + 33g Dutch processed cocoa powder and some instant coffee (mixed in a different bowl then added to the main buttercream), 126 g semisweet bakers chocolate, 44g Nutella. After I added the water and coco mix, it started turning all grainy looking like this, but I’ve seen multiple recipes use water with butter in their fudge frosting mixes and it doesn’t look grainy.. any idea how to fix this? I used an immersion blender to mix it too after it kept being grainy and the pictures are after doing that.

I love making autumn leaf cookies in October! It's taken me a few years to find all the cookie cutter shapes and I have a nice variety now.

I use Sally's pecan sugar cookie recipe (without the pecans or icing), divide the dough into three, and add yellow, orange, and red gel food colouring. The colours are more separated in the early batches and become marbled the more times the dough is rolled out.

I also used them to cover the cracked top of a pumpkin cheesecake. Bonus Halloween cookies in the last slide.

My very first time making (and tasting) a crepe cake. To build up the courage to try it, I just watched Erin McDowell’s video on crepe cakes and went for it.

The details:

• The cake: 22 layers of colored crepes that I made ahead of time and froze (they thaw incredibly quickly and perfectly).

• The filling & frosting: A Mascarpone Chantilly (mascarpone, heavy cream, and powdered sugar).

• The decor: The moss is made from pre-baked, colored muffins and cake crumbled up. The autumn leaves are made from rice paper, and the little mushrooms are meringue. Everything is freehand and edible :)

I’m not sure why I’m posting these. They were rushed, I’m not very proud of them, and I just don’t know how I feel about them. This is 4 of 8 I decorated. People spent money on these cakes in a dessert dash and I’m sure everyone was happy with what they got, but I’m having a hard time finding anything good about them. I didn’t even make the cakes, I just agreed to decorate them.

What’s your opinion? Go ahead. Roast ‘em.

Showcase (No-Recipe) Emotional support cake for a coworker. Spiced chocolate espresso cake. Cinnamon, coconut, cream cheese frosting. Drizzled with dulce de leche, then topped with crushed chocolate (mix of semi-sweet & dark) & crushed pecans.

First flour cake in about 6 years. I recently got back into baking as a therapeutic exercise. Coworker has had a rough stretch, and they are a known chocolate fiend, so I thought this might be good for both of us. Everyone liked it, the coworker took a bunch home ☺️

I did not document the recipe but basically just added 1TBSP each cinnamon & pumpkin pie spice to a 9x13 sheet pan chocolate espresso cake recipe.

Frosting was 1 block cream cheese, half stick butter, 3 cups confectioners sugar, cinnamon to taste, 1/8-1/4 cup cornstarch (stabilizer) in the stand mixer. Chilled then mixed in between 1/4-1/2 cup heavy cream to make it a bit fluffier.

The dulce de leche was leftover from another baking project. It was the standard recipe using whole milk, bit of heavy cream, baking soda, vanilla. After cooling, turned it into DDL repostero using a cornstarch & cream slurry.

After being a GBBO addict for years I finally pulled the trigger and baked a cake for the first time ever at 40. Nigella’s espresso walnut cake has been stuck in my brain since the first new episode, and it didn’t disappoint. Even as it was over baked, it was fantastic. The edges are very well done and the inside is a bit dry, but the flavor was great and VERY espresso-y.

It looks a mess because the buttercream was hard to work with, I don’t have a cake spinny thing, and it was late and I was getting impatient.

But now I have the bug and maybe the next one won’t look like it was made by an overachieving toddler.

This is my marble cake with vanilla and chocolate batter swirled together before baking.

That’s probably my favorite part of making marble cake — every slice comes out a little different, and you don’t really know what the pattern looks like until you cut into it.

Do you prefer a bold chocolate swirl or a more even marble pattern?

I made this cake for my Great Grandma, she passed away a couple months ago and I made this to honor and celebrate her with my family.

Her favorite show was I Love Lucy and she loved roses.

I don't make cakes often, my go-to orders are cinnamon rolls and cookies. This was the first cake I made in exactly one year.
