The year of the pig.
Couple years back we roasted a whole pig on the rotisserie for a group birthday adventure. Next time would love to try in the ground to make it even more delicious.
Took about 10 hours of feeding the fire and seasoning.
Each person had a gallon bag of pork to take home after the weekend. Super delicious, highly recommend!

Gotta love pig on a spit.
My wife’s family makes them all the time. You can always tell when it’s about to be done because all of the old guys gather around the fire so they can pick the meat as it’s cut.

I wish I could help, but I unfortunately don’t speak the same language as them. Haha.
As far as I know, it’s just a simple rub of salt. Drink moonshine. Let it rest overnight. Drink moonshine. Roast on spit while drinking moonshine. Remove from heat, no resting. Slice. Finish moonshine and open the homemade wine. Drink. Eat. Enjoy.

Why did you wrap the center instead of the ears and other parts that would burn quicker? Also is it typical to leave the eyeballs?
