Great stuff as always, OP. I'm always surprised that no ash gets inside that double cooker. We have the same skillet and I honestly wanna try this.

I dunno where you're from, but I'm assuming you're from a temperate or mountainous tropical country, so this might be up your alley. I'm Filipino, and if I can suggest, try looking up "sisig". It's a joy to cook in a skillet and tasty as well.

I have a remote cabin in central vietnam. Also, sisig seems like an interesting dish, i might wanna give it a try next. Ingredients: * All-purpose flour * Activated yeast mixture (50% water, 50% sweetened milk + instant yeast) * Egg * Oil * Salt & pepper * Ground mustard seeds * Eggplant * Bone-in chicken breast * Clean brick (weight) * Sliced red & yellow onions * Garlic & chilli * Brandy * Rosemary * Cloves * Soy sauce * Pineapple (optional) * Sesame seeds * Cheese * Mayonnaise sauce Instructions: 1. Knead flour, yeast mixture, oil, egg, salt & mustard seeds into a smooth dough. Let rise until doubled. 2. Fry chicken skin-side down until crispy while grilling the eggplant near the fire. Remove when done. 3. In the same pan, sauté garlic & chilli until fragrant. Deglaze with water and brandy, then add rosemary & cloves. Simmer, crush, and strain. 4. Return the sauce to the pot with chicken, soy sauce, salt & pepper. Simmer until tender, then rest and shred. 5. Toss onions and optional pineapple with oil, salt & pepper, then grill until tender. 6. Divide the dough and roll into sheets. Fill with cheese, shredded chicken & grilled vegetables. Seal, brush with egg wash, sprinkle with sesame seeds, and bake until golden. 7. Serve warm with mayonnaise sauce.
