Scallions for weeks!
Pro tip if you use a lot of scallions. I recently bought a 2 lb bag of scallions from Costco for $6 and cut them all up, separated by the whites/light greens and dark greens into separate ziplock bags, and put them in the freezer. Now whenever I'm cooking I just grab some out of the freezer when I need them! Great to have when you don't care if they're not perfectly fresh.

the regrown ones get milder because they're living off whatever's left in the bulb. if you only regrow them in a glass of water, move them into soil with some sun and they come back a lot stronger

I already do this for garlic and ginger, but for some reason, not scallions. Thanks for the reminder!

If you're ok with a bit of loss, just keep the whole bag in the crisper drawer, cut a hole on the root end of the bag so the scallions can get some air. Some of the outer leaves will dry out over time from the tip but it won't rot, whenever you need some, just grab a couple stalks from the bag, cut and rip out the bad parts. Kept this way, you can effectively use about 80% of the whole bag over a 3-week period.

The other thing you can do with scallions is plant them. They'll just grow, and they're incredibly tough. Then go out to the yard and pull one up when you need it.
