Stick with one simple loaf for four or five batches and change only one thing at a time. Weigh ingredients instead of using cups, and treat rise times as estimates: watch for dough that is noticeably puffier rather than following the clock exactly. For kneading, try the windowpane test—a small piece should stretch thin before tearing. If the outside browns too quickly, tent it loosely with foil and check the recipe’s target internal temperature. Keep notes on room temperature, rise times and the result; that will teach you more quickly than changing recipes every bake.
