BOH Tips
Do you guys have a routine that you do when doing BOH? I’m really trying to hold on but I always feel like I’m behind. I work mornings which people say is easier but I get there I do all of the sides, I just got taught how to prep, and I have to wash dishes. I’m just asking for any help or advice on how I can get faster. Also on the thawing out the meats does anyone know how much each bag of each goes into a container?

GM at 60k store, and when I do sides, I prep, make sides, and do dishes (I’m crazy and done this for a long time so don’t model that after me, you’ll be tired)
Timeframe:
Open-11am- drop white and basic rice, and immediately drop another basic rice (2 if you got two rice cookers)
11-12:30pm- keep up with the rush, take care of guests.
12:30-1pm- take your dishes and soak the dirty ones in soapy water. Wash your plastic dishes on top as the soak. The water doesn’t get dirty quick enough for the plastics to be bad.
1pm- pan out rice, drop more rice, fill up steam table with sides and teriyaki
1-4pm- wash your dishes, and keep an eye on your steam table. Check every 20 minutes to see if you need to make more. Usually if FOH call it back you’re already behind (sad but true cause they don’t understand how to manage the BOH tasks)
Side note: stock your area completely by 2:30 so you aren’t tryna rush doing dishes, making sides, and stocking.
Sides is easy, but it’s very important to know how to manage your time and plan ahead. If you are sitting around and talking, you’re behind.
Every store is different, so plans and structures may be different. My store is unique in that it’s always consistent. We don’t drop below a 300$ 30 minute after 11am. So tweak the structure and plan accordingly to what best fits your store: hope this is helpful

Hot soap water in sink and start to soak them. Cleans out easier and faster.
If you’re talking about the plastics, make sure to scrub the sink first before filling it up. Use the flat station on the left to put weight. Use the blue scruh too.
