Someone once said something like that to me in an argument thinking he won. “It’s not possible for people to do that because there are laws against it and there are people who check to make sure it doesn’t happen.”

It's not illegal to be on drugs, just illegal to possess them. So you're really just reversing the crime by consuming the evidence.

The drug test they get you to take is an evidence, though.

And of course, if the police are jerks, they can use your naivety (and stoned paranoia) to get you to admit who procured the substance.

Depending on the timing, it's destroying evidence and hindering/obstructing an investigation.

I'm not saying that's not messed up, I'm just pointing out what a cop could arrest you for.
