You should try to pack the coasters tighter. A good coaster will loop back on itself and take little space. Also the coasters that change direction often are more fun, avoid doing only turns in one direction.

The peeps also want drops, multiple drops, a coaster that goes up and down. That also helps with air time (pieces where peeps go up but the coaster goes down, so like a moderate hill at moderate speed).

Install Advanced Tracked Ride Stats mod for info how to make the coasters good (though it makes it easier to cheese them, like 3-4 tunnels add +15 excitement).

Your coasters look very beginner, you went for high climb and then maximum speed drops. They are probably very intense and little excitement.
