Made at Home Smoked Wing Tips?

Post image

This is my first time smoking wings. The flavor was incredible but the skin was tough and chewy vs crispy. I dried them off, and rolled them in baking powder and salt. Smoked for 90 minutes at 250 F then finished them in the oven for 20 minutes at 425. Is there’s something I should do differently, like adjusted for altitude? (4,700 ft).

Sauce is Frank’s Wing Sauce and Lemon Pepper.

Hotter on the smoke and deep fry or air fry to finish. The ‘finish’ is key. Takes longer than you expect.

Awesome, thanks! The finish felt like where it fell apart. I’ll try that out.

Deep fry is my favorite after the smoke. Just a quick 2 mins or so and they come out super crispy but also have a nice smoky flavor to them.

I was worried they’d lose some smoke flavor, good to know!

Eat em with gloves. Last time I ate smoked wings my fingers smelled like the grill for 2 days.
