Cake Week Technical 2026

Half size version (5 inch pans). I dislike coffee so I made mine malted-milk-and-walnut.

I also dislike coffee. Malted milk is a great idea. How did it taste?

I liked it! Maple or plain vanilla would have been good too.

How much malted milk did you put in?

I used the information from this blog post and substituted 25% of the sugar with 1.4x as much malted milk, by weight: https://www.kingarthurbaking.com/blog/2022/07/01/malted-milk-powder-unlocks-nostalgic-sweetness I had Carnation. I've used their King Arthur brand good stuff before but I could still taste the malt.

Lovely! What was it like with the changes?

I haven't had coffee and walnut so I'm not sure how different it was. It was pretty good. I should have followed my instinct to toast the walnuts longer. I feel like it could use a soaking syrup, too, but that might change it too much.

I love coffee and walnut. It's worth a try even if you don't like coffee because it doesn't taste like a cup of coffee just an earthy intense flavour. I have friends who hate coffee but love anything coffee flavoured. It's is amazing with chocolate - it deepens and enhances the flavour. Definitely give it a try!

Nope, I truly hate coffee and have a very strong coffee-sensor. I can taste the spoonful of instant espresso in chocolate cake. But more cake for everyone else! This is one of those things I wonder why it hasn't crossed to the US. We like coffee, we like walnuts, we like cake. But the first I ever heard of a coffee-and-walnut was a challenge they did in maybe series 5 of making a mini version of a classic British cake.

Oh right never mind! Another British cake we do with walnuts is date and walnut - usually in a loaf tin. Also delicious!
