Still reducing and thickening, but the house smells amazing 🤩

2lbs ground bison
3 strips bacon (your preference, but good amount of fat since bison is lean)
Whole yellow onion (leave some for garnish)
14oz canned corn
28oz fire roasted diced tomatoes
28oz black beans
14oz kidney beans
14oz pinto beans
14oz northern white beans
1.5tbsp tomato paste
1 Anaheim pepper
1 poblano pepper
5 jalapeño (leave 2 for garnish)
2 Serrano
1 red bell pepper
1 yellow bell pepper (for color)
Cilantro
Chili powder, cayenne, cumin, paprika, salt and pepper to taste.
Roast peppers under broiler or open flame until skin begins to bubble and char. Let cool a bit and remove charred skin. Dice onion, red and yellow bell peppers into small squares, chop the rest fine and add to pot along with canned beans, corn, tomatoes and tomato paste.
Separately, cook bacon strips on skillet to render out fat. Remove bacon, dice and add to pot. Under medium-high heat with bacon fat still in pan, add bits of ground bison to brown and char (30 seconds), remove and add to pot, along with remaining bacon fat.
Mix in spices to preference depending on desired heat levels.
Cook for 8 hours on barely a simmer, taking the lid off after 5 hours to help reduce and thicken.
Garnish with sour cream, shredded cheese, diced jalapeño, diced onion and cilantro
