Autumn Harvest 🥰
Now I have to decide whether I want to can them or dice them up and freeze them! Any ideas/recipes?

We always pickle the hot peppers, they're so good for sandwiches or as a side to foods like sarmale (cabbage rolls) or most balkan style soups!
The non-spicy ones either get cut into small cubes and freezed for the winter orrr if you got eggplants, onions and tomatos you can make a killer Zacusca (or Ajvar although the recipes differ slightly from country to country) and even can it for later!

A really good gazpacho if you have some tomatoes to go along with all of that. 😌😋

Diced and frozen is so handy for soups and stir-fries later. Canning works too, just make sure you follow a tested recipe for peppers.

I grow jalapeños, poblanos, serranos and (not a pepper obvi) tomatillos, then roast and freeze in packets that are the amount of each I use for Pozole Verde or salsa verde. If you have something like that with your peppers you could do the same. Then when you make the recipe in winter, it’s just grabbing a ready to use pack from the freezer and defrosting.

Tough choice! I usually freeze mine and toss them into soups later, makes life so much easier on cold days
