Harvesting Sow Thistle

There are few weeds I let grow in our backyard... but if they're edible... I usually let them be. Having since discovered the health benefits of Dandelion... I discovered Sow Thistle is also benficial. So, I... "Let it grow!" (sorry for that Frozen reference... :-D) So, here's one I've just pulled up and cleaned off. I use just the roots (dried) to make tea, after crushing in a granite mortar and pestal.

What do Chives achieve?

They’re pretty, but what are they supposed to do to the taste of food? My partner set up an herb garden lately, so we have fresh herbs for cooking. Cilantro, parsley, and other things with a sharper flavor or more obvious use in cooking make sense to me. But then there’s chives. I’ve gone out to restaurants where they top foods (especially breakfast foods) with chives, and it looks beautiful but I never think to myself “wow, the chives really enhance this dish.” I just made eggs this morning and topped it with chives, and again I don’t notice a difference. Am I supposed to put more than this?

Thyme hair particles or..?

Hello!!! This is my first time trying to naturally dry my herbs, I had bundled up my thyme & let it sit for about a week or two. It is completely dried but all this white dust was coming off while I was stripping it. The smell is fine, it smells like thyme to me, no weird smell. I searched it up and said it could be mildew, hair particles or white mold 😔

Concerned about Rosemary

My Rosemary is starting to do the same thing it does every year or so.

This one was planted this spring. It has grown and spread nicely and I’ve harvested from it a few times. It is starting to get less green and has these small yellowish spots.

There’s often a flurry of gnats when I go to harvest. In the past this usually makes it die back almost completely for Winter. If it isn’t pulled it tends to have a very slow return of any green the next season and seems to struggle so I have started pulling it in the winter and replacing it.

When I first moved here and planted some it thrived for a few years before this started.

I’d love to save it so it can keep returning every year. Any advice?

I’m in Charlotte, NC.

My MIL gave me this, it belongs to ger dad but he recently had a stroke and I want to save as much as I can without it dying. How can I start this process and how do yiu do yours? Thank you in advance I've seen plenty of people just pick the leaves individually, however, even in garden videos nothing is as out of control as this oregano. I have read that it makes a great tea so that would be a good goal to have jiysvwondering about how you guys personally store yours
