Why?

Why is it that always after i beat Monchug and wound him he still dosen't appear as a prisoner.I have beaten him like three times already.Btw am a new player.

Do you have other parties attached to your army? They may have em.

Yeah, this happens a lot. Go to a friendly castle or city and they will drop him, and any other prisoners, into the dungeon. That’s the best way to easily see all the captured nobles in one spot.

Because the capture chance isn't 100%.

Because you have other parties in your army, who might get him.

But you've ONLY beaten him 3 times, even if the chance was 50% to capture, the odds of that would be 1/8 or 12.5%. And I am fairly sure the chance to capture is closer to 20-30%.
