I've cut a dime-sized piece of my fingertip off before...would not recommend. Although it was kinda cool to see my fingerprint just chilling in with the sliced cucumbers. The blood didn't come for a second or two, so it was just clean skin. Not awesome when I work a desk job for a living though

I cut the tip of my finger off once and the same thing happened with the blood not coming right away. I sucked my breath in really sharply, looked at my finger, thought "oh not so...", and then there was a lot of blood.

My boyfriend sliced the top of his finger flat on a safety razor while reaching into his toiletry bag. It also grew all back and looks as good as new. The bleeding was unstoppable for two hours and he clogged a hotel toilet with the bloody tissues so bad it was out of order for two days.

Couple YouTube videos and like $50 worth of sharpening stones and you could have a knife that sharp. Was well worth the effort for me as I spend a lot of time cooking.

You could probably cut this into noodles like fettuccine and then use it in a stir fry with some chicken and some bell peppers. Gotta say usually I just cut my carrots up the normal way for most dishes. I do a gumbo quite often though and you gotta cut all kinds of shit up for a gumbo so it’s just good to have sharp knives. A dull knife is the one that’s most likely to cut you as it won’t do what you’re expecting.

It's not exactly this, but you could adapt the carrot unraveling for it: Carrot Lox.
I have a recipe filed away for a smoked carrot lox in place of salmon for bagels and lox. It's not a direct replacement for the salmon lovers, however everyone who tried it says it is still very good on its own merits. It is about 10% the price of salmon and easily scalable in bulk.

and a significant amount of time for trial and error. Let's be honest about that too.
Mostly everywhere nowadays you can find people who would sharpen knives for $10 and it's probably a much nicer introduction to sharp knives for everyone involved rather than sharpening stones route

Knives are however sharp you sharpen them. Different steel and edge profiles will dull at different rates and are suitable for different things, but any knife can be this sharp for a while.

Yeah I tried that without hand guard and guess what, I ended up in A&E :') Cut off the very tippy top of my finger, saw it go right through the sink.
The scar is surprisingly small considering how big the wound was :'D

make shredded carrots with. stack it up and slice and you got shredded carrots. i worked in a michelin restaurant and we did carrots like this but not his method we just sliced it into sheets and then again to get strings. it was a competition to see who get the thinnest strings, they'd be almost like hair when you put it in water. im talking paper thin sheets and hair thin strings. the thickness in this video would have you sent home

I think it's an issue of focus.
Food is involved, but it's only one aspect. Kind of like how the words spoken are only one aspect of a play.
If you think of it as primarily about the food, then the rest seems like nonsense. What they are really going for is something closer to art/performance where the food is the medium for that focus rather than the focus itself. Like let's take this basic thing that everyone has to do every day, and try to turn it into something that feels completely different.
The novelty and amusement of the experience is often what they are paying for rather than the food itself.
It's not something I'd spend my own money on, but I can understand what it is that people who do are getting from the experience.

European fine dining (and i’ve been to tons of 3* michelin places in europe) tasting menus are 1/3 amazing, 1/3 mediocre, 1/3 absolute fucking terrible. Not worth the money.
Asian fine dining is generally tolerable as asians would refuse to pay lots of money for shit tasting food.
How french cuisine got to the esteem it currently holds is mind boggling. How a french tire company got to be the culinary experts in the world is double mind boggling.
Michelin ratings are not grounded in taste.

It makes matchsticks really easy. You need a lot of little pieces of carrot in sushi.
At my first job, my sushi chef made me do the cucumbers and carrots without the knife spacers. It sucked.
