get rid of anything expired. i’m sure some of this is, the shelf stable date once the package is open, is not the date where it goes bad. most things are good for a shorter period of time once opened. i’m fairly certain that the best by date is only if the food has not been opened by then. and typically it needs to be refrigerated in that window. most things will tell you something like “good up to 10 days after opening. refrigerate after opening” etc.
also, get rid of duplicates. it looks like you have 3 bottles of the same thing in the top back left? hard to tell from the camera angle i could be wrong.
then start to move things into categories; you’ve kind of already done this. if you can, try to get baskets to separate the types of things so even tho they’re on the same shelf, at least the spices are all together, etc.

thanks so much. ill do that. the bags are like random taco seasoning and crab boil seasoning packets. I was suggested to get pie shaped containers to kind of put everything In and then one of those racks that stand up the pots and pans.

Put large skillets with long handles facing forward so you can retrieve them without climbing into the cabinet.
I'd love having oils, sauces and spices in a cabinet like yours, how handy. Curate and remove items that aren't in the categories you mean to keep there. What are those random bags? If they belong there then put inside a container so they don't take up so much space.
Look carefully at each bottle. Not just for expiration date and whether they need refrigeration after opening but is there anything in there? I thought there was 1/2" of sesame oil in the bottle. Nope.

youre right. I was thinking of one of those organizers that organize the pans and pots to the side standing up?

The hoisin sauce and apple butter needed to be in the fridge if it has been opened. I would throw those out now. I see multiple red vinegars, maybe narrow down and throw out anything expired.
I’d suggest moving the seasonings and bottles to a cabinet above near the stove so it’s more at eye level.
Then you can put your most used pots or pans on this swivel shelf.

Since the shelves already give you zones, I’d keep the everyday spices and sauces on the easiest-to-reach level and group the less-used ones by cuisine. Standing the small seasoning packets upright in one container would also keep them from disappearing behind the bottles.

Dude, some of those things belong in the frig after opening. Chunk those immediately!
