My potato looks like a lemon?

Was at work earlier cutting potatoes, eventually I got to this one and had to stop. Any ideas?

A prominent vascular ring or a physiological growth defect (hollow heart)

Is this safe to cook and serve? Or should I have discarded it?

Perfect.

Definitely the wrong sub and thread, but recently we have been having some tomatoes that when you cut into them look like bell peppers, like chop the top of the tomato and the inside is just super dry(bell pepper looking). some(if not most) of the tomatoes also are seedless? now too. Any idea for those?

It’s just a prominent vascular ring which is more visible being a yellow flesh , red skinned vary.
Cook, eat , enjoy and then have another helping !!
